10 AM: the fish shows up

Our fish comes in Tuesday to Saturday, usually around ten. Ren checks every box before the driver leaves. If something doesn’t look right, it goes back on the truck. That happens more often than you’d think.

Noon: rice, then knives

The first rice goes on at noon. We cook it in small batches all night, so the rice you eat at 11 PM is as fresh as the rice at 5. While it rests, the knives get sharpened. Every knife, every day.

4 PM: the quiet hour

This is the photo. The room is empty, the music is off, and Ren is cutting fish for the first seating. It’s the only quiet hour we have, and nobody talks much.

5 PM to close

Doors open, the speaker comes on, and it gets loud fast. Tuesday is our slowest night, which makes the counter the easiest seat in the house to get. If you want Ren to cook for you without booking weeks out, come on a Tuesday.
