Loud Fish is a sushi bar in Gastown. We buy BC fish first, cook Japanese rice the slow way and keep the music up. Ren Okada runs the counter. Jess Marlow runs everything else.

The fish

Most of it comes off BC boats: albacore, sockeye, spot prawns in season and uni from Haida Gwaii. What BC doesn’t catch, we fly in from Tokyo.

The counter

Ten seats facing the cutting board. Sit there if you want to talk. Ren will tell you what’s good tonight.

The room

Brick walls, a big speaker and records we argue about. It gets loud after nine. That’s the point.
